Mix vegetable curry

Now a days most of the people are preferring  food recipes which requires very less oil. This change is actually very good for health. Because consuming large amounts of oil can lead to many health problems.

So in today's post I am going to share with you all a quick and spicy mix vegetable curry. Well this curry is not dhaba style curry with lots of masala and oil.
This curry is spicy but with less masala and oil. This is how I usually prepare mix vegetable curry at our home.

This goes well with chapathi and poori.

So let's look into the ingredients which are required to prepare this curry.

Ingredients:

1. Vegetables of your choice -- carrot, cabbage, potato, french beans, capsicum, green peas etc.
2. Onion - 1 big finely chopped ( optional).
3. Tomato - 2 medium finely chopped.
4. Green chili - 5 finely chopped.
5. Ginger - finely chopped.
6. Mustard seeds - 1 teaspoon.
7. Jeera - 1 teaspoon.
8. Turmeric - 1 teaspoon.
9.  Salt - as per your taste.
10. Dhaniya powder - 1 tablespoon.
11. Jeera powder - 1 tablespoon.
12.  Garam masala - 1 tablespoon
13.  Chilli powder - 1 tablespoon.
14.  Sugar - 1 teaspoon.
15. Curd - 3 tablespoons.
16. Besan flour - 3 tablespoons.
17. Coriander leaves - handful.
18.  Pudina or mint leaves - 5.
19. Oil - 3 tablespoons.
20. Garlic - 5 pods ( optional).

Procedure 

1. First cut different vegetables like carrot, cabbage, potato, french beans and keep them in water to avoid color change.

2. It will be easy if we cook this curry in a pressure cooker.

3. So place a cooker on the stove, add 2 table spoon of oil and heat it for a minute.

4.Now add a teaspoon of mustard seeds, jeera seeds and let them splutter for a minute.

5. Once spluttering  is over , add finely chopped green chili and ginger and saute them for a minute.

6. Now add medium chopped tomatoes, 1 teaspoon of turmeric and salt.

7. Keep in medium flame and cook for 5 minutes till tomatoes become soft and mushy.

8. Once tomatoes are soft, then add curd and let it cook with tomato paste for 1 minute.

9. Now add 1 tablespoon of coriander powder, 1 tablespoon of dhaniya powder, 1 tablespoon of chili powder, a pinch of sugar.

10.Mix all the ingredients nicely. Cover and cook the masala for about 5 minutes.

11. Once the masala is cooked nicely then add all the chopped vegetables and give it a nice stir.

12.Cover and cook on slow flame for 3 mins.

13. Finally add chopped coriander and pudina leaves and stir nicely.

14. Now add water accordingly and mix nicely. Add water depending upon the quantity of vegetables taken.

15. Close the pressure cooker with the lid and cook for  5 - 7 whistles.

16. Now take a bowl , add 2 tablespoons of besan flour and add some water and mix nicely. There should not be any lumps.

17.Once the cooker is cooled, remove the lid.

18.Again keep the cooker on the stove, there will be water present in the curry.

19.Slowly add the besan mixture and mix nicely.

20. Adjust the curry consistency and cook on slow flame for 2 minutes.

21. Dish out the curry into a serving bowl and it's ready to serve.

Thats it tasty and spicy mix vegetable curry is ready .Finally add chopped coriander and its ready to serve.

As you can see very less oil is used in this preparation and since we cooked the curry in a cooker all the nutrients will stay within the curry.

It requires very less time to prepare this curry.
