Hi friends,
I am back with my second post for today. In this post I am going to share a new
recipe called Telagapindi curry. This is vegan style “Egg Bhurji”, but
without egg.
You may
think what this “Telagapindi” means, let me explain. I assume you are aware of
Sesame seeds also called a Nuvvulapappu or Til. After extracting the oil from
sesame seeds the leftover residue is called as Telagapindi. This is very rich
in folic acid, vitamin B and dietary fiber.
The below is the picture of
Telagapindi. I brought it from my hometown Vishakhapatnam.
Now coming
into the preparation of making this recipe, you need the below ingredients:
1.Telagapindi
– 1cup (take quantity as per members of your family because it will become
double once it is cooked).
2.Onions –
2.
3.Green
chilies(Pachimirapakayalu) – 3.
4.Ginger(Allam)
– finely chopped.
5.Garlic
cloves – 10 to 15 cloves.
6.Salt – 1
teaspoon.
7.Chilli
powder – 1 teaspoon.
8.Mustard
seeds(Avalu) – 1 teaspoon.
9.Jeera(Jeelakarra)
– 1 teaspoon.
10. Urad dal
(Minapappu)– 1 teaspoon.
11.Chana dal(Senagapappu)
– 1 teaspoon.
12.Curry
leaves(Karivepaku) – 10 leaves.
13.Capsicum
– finely chopped(optional).
14.Oil – 3
to 5 teaspoons.
15. Asafetida/Hing(Inguva)
– half teaspoon.
Preparation:
1. Place a kadai on the stove, add 3 to
5 teaspoons of oil and let it heat for a minute.
2. Add mustard seeds to the oil and let
it splutter, then add jeera, green chili, ginger, garlic cloves, Urad dal,
Chana dal, onions, curry leaves and fry until they turn brown.
3. Once the onions turn brown then add
finely chopped capsicum (you can exclude this if you want) and let it fry for a
minute along with the above onions.
4. Once all the ingredients are well
cooked then pour 2 cups of water (i.e. if you take 1 cup of Telagapindi then
add 2 cups of water). Add chili powder, salt and Hing. Cover the pan with lid
and let it boil for a minute.
5. Once the water in the pan starts
boiling then slowly add this Telagapindi and stir it slowly and evenly.
6. All the water will be slowly absorbed
by the Telagapindi mixture and it becomes dry.
7. Cook the curry on slow flame until it
turns a bit brown.
8. Once the curry turns brown, switch of
the stove and the curry is ready to serve.
So easy
right😃. It will be done within 15 minutes and if you are a busy mom then please
do try this recipe if Telagapindi is available in your area.
This taste awesome
if you cook using Nuvvula oil/Sesame oil/Til oil.
Important Note: For new moms this a super and must
try recipe because it increases the milk flow. But try only after 1 and half
or 2 months after delivery. I personally tried this recipe and experienced
positive results. So, I strongly suggest it to you as well.
Please do
add more garlic cloves and Sesame oil in this recipe because these two also
helps in increase of milk production. Exclude Chana dal and capsicum
(for new moms).
