Cauliflower Stem Chutney

Are you all bored of having same chutneys like coconut, groundnut, ginger etc. every day for breakfast or dinner?

Then serve this yummy and tasty chutney with idly or dosa and earn compliments from your family.

You all will be surprised if I tell the main ingredient which I used for preparing this chutney.

Before revealing that I will ask you all another question. Don’t get bored just continue reading.

We all know winter season is famous for cauliflower or Gobi. Almost in every household we prepare a variety of dishes with Gobi in these two months.

Most common dishes are gravy curries or manchurian or Gobi 65 or fry curries.

For all these dishes we usually use the florets of cauliflower and throw away the stem part.

But after reading this recipe, you won’t throw away the stems of Gobi; instead you make nice chutney out of it and serve it to your family.

Surprised right, well I am too when I learnt this recipe from my mother.

This goes well with all kinds of dosa, idly and uttapam.

So in today’s post I am going to share with you all a simple recipe called as “Cauliflower Chutney(Using cauliflower stems)” .



Below are the ingredients required to prepare this yummy chutney.

Ingredients:


1.     Cauliflower stems

2.     Urad dal – 2 tablespoons

3.     Til seeds – 2 tablespoons

4.     Mustard seeds – 1 tablespoon.

5.     Salt – as per your taste.

6.     Green chili – 6 to 7

7.     Dry red chili – 3

8.     Tamarind – small lemon size

9.     Jaggery – small lemon size

10.  Oil – 3 tablespoons.

11. Hing – ½ teaspoon.

12. Turmeric – ½ teaspoon.

13. Curry leaves – 2 to 3 (optional)

14.Garlic – 2 pods (optional).


Procedure:


1.     Take the cauliflower stems, remove the green leafy part as much as you can and wash them nicely under running water.



 2.     Cut the stems into small pieces.

 3.     Place a pan on the stove, add 1 tablespoon of oil and heat it for a minute.

 4.     Add urad dal, til seeds, dry red chili, and garlic (optional). Fry till they turn golden brown.

 5.     Dish out and keep them aside.

 6.     Now in the same pan add 1 tablespoon of oil and add cauliflower stem pieces and fry them for 5 minutes.
                
7.     After 5minutes add medium chopped green chilies and continue frying for another  5 minutes,              

8.     After 5 minutes add tamarind into the pan and mix all the ingredients nicely.
                  

 9.     Cover and cook the stem pieces for another 5 minutes on medium flame. Do not over fry the pieces.

 10.   Once the stems are nicely fried and cooked, dish out all the ingredients to a plate and cool them. Cauliflower stems should be fried nicely until they turn golden brown; else the chutney won’t taste good.

 11.   Take a mixer jar, add dry red chili, urad dal, til seeds,garlic(optional) and grind them into fine powder.

12.  Now add  cauliflower stem pieces along with green chili, tamarind, turmeric and salt. Add salt as per your taste and grind all the ingredients nicely.

13.    Add jaggery along with a little amount of water to a coarse chutney mixture and grind the mixture into a smooth paste.

 14.    Dish out the mixture into a bowl and keep it aside.

 14. Now for tempering, place a pan on the stove, add ½ tablespoon of oil and heat it for a minute.

 15. Add mustard seeds and let them splutter for minute. Once spluttering is done switch off the stove and add hing and curry leaves into the pan.

 16.   Add this tempering on top of the chutney mixture.



                                  
That’s it tasty and yummy cauliflower chutney is ready to serve. Trust me it tastes awesome and your family will love it.
