This is a nutritious
and healthy curry which is perfect blend
of proteins,carbohydrates and minerals
that are needed for an individual in a day.
You can have this
curry as a side dish for both chapati and rice.
The vegetables used in this curry mainly are brinjal and sweet potato which are easily available in this season.

This dish can be
prepared within 20 min and requires minimum ingredients which are easily
available in our everyday kitchen.
Ingredients:
1. White brinjals - 4.
2. Sweet potato - 1 medium size.
3. Potato - 1 medium size.
4. Green peas/ groundnuts - handful.
5. Carrot -1 medium size.(optional)
6. Tomatoes - 1.(optional)
7. Green chilli - 3 small.
8. Ginger -finely chopped.
9. Tamarind - small lemon size.
10. Salt - as per your taste.
11. Dry red chilli - 3 to 4.
12. Turmeric - 1/4 spoon.
13. Curry leaves - 5.
14. Urad dal - 1/2 teaspoon.
15. Menthi powder - 2 to 3 teaspoons.
16. Oil - 4 tablespoons.
Preparation:
1. Cut brinjal and potato into medium size pieces.
2. Wash sweet potato well and cut them into small round pieces,but do not peel the outer layer.

15. Menthi powder - 2 to 3 teaspoons.
16. Oil - 4 tablespoons.
Preparation:
1. Cut brinjal and potato into medium size pieces.
2. Wash sweet potato well and cut them into small round pieces,but do not peel the outer layer.
3.Now take the tamarind,soak it in lukewarm
water for about 15 min,squeeze out the pulp and keep it aside.
4. Now place a kadai on stove,pour 3 tablespoons of oil and let it heat for a minute.
5. Add urad dal, dry red chilli,finely chopped ginger,garlic(optional) and green chilli. Saute them for a minute till urad dal turns a bit brown.
6. Now add chopped brinjal,potato,sweet potato,carrot and green peas or groundnuts into the kadai. Pour little amount of water,add salt and turmeric.
7. Close the kadai with a lid and cook all the vegetables until they turn soft.
8. As per the curry quantity,add tamarind puree and menthi powder( 2 tablespoons).
9. Mix all the ingredients well and close the lid. Cook the vegetables well in tamarind puree until all the water in kadai evaporates.
10. Add finely chopped coriander or curry leaves and close the lid for 1 minute.
11. Now transfer the curry into a plate and its ready to serve to your family.

Spicy and tangy brinjal curry is ready to eat .This is very nutritious curry and requires very less oil to cook. Those who are on diet should definitely try this recipe.
Note: 1.For preparation
of menthi powder you can find it under powders section.
2.You can use violet
colour brinjals also for this curry,if you don't have white brinjals.
3.If some brinjals
are ripe,then first cook the brinjals along with salt and turmeric in
water.Strain all the water using strainer,this helps in reducing the sour taste
present in ripe brinjals.
