As this is
festive season everyone will be busy cooking variety of dishes for your family.
Mostly today in everyone’s household Gutti Vankaya curry is common, without
this curry the festival will not be completed.
But today I
am going to share with you a new variety of brinjal curry called as “Vankaya Menthipodi”, this is
traditional Andhra recipe.
It tastes
heaven if you eat it with hot steaming rice in combination with ghee.
Now going
into the preparation of making this recipe, you need the below ingredients:
1.Brinjal(Vankaya)
– 10 to 15(sufficient for a family of 4).
2.Menthipodi
(Fenugreek powder) – 2 tablespoons.
3.Salt.
4.Tumeric –
1 teaspoon.
5.Oil – 3
tablespoons.
Preparation:
1.Cut the
brinjals(Vankaya) as shown below.
2.Place a
pan on the stove, add some oil let it heat for a minute. Now add the brinjal pieces,
turmeric, salt and stir them a bit so that the salt will be equally distributed
to all the pieces.
3. Add very
little amount of water and cover the pan with a lid. Let the brinjal pieces
cook on a slow flame.
4. Mix the contents
in the pan in small intervals such that all the pieces are evenly cooked.
5. Once they
turn soft like below, add Menthi powder and very little amount of oil to it and
mix well. Cover the pan with lid and let it get cooked for 2 more minutes.
5. You can
add coriander leaves at last. This is optional.
6. Transfer
it to a plate after 2 minutes. It’s ready to serve now.
That’s it
very easy and tasty Vankaya Menthipodi curry is ready. It needs very less oil
hence it is a very healthy curry and can be cooked within 15 minutes.
You can make
Menthi powder and store it for 1 month in an air tight container. Whenever you
are in a hurry, then this curry will be your savior.
